In Russia, sturgeon has always been appreciated for its distinctive taste, tenderness and high nutritional value. Sturgeon is called "royal fish" as it was served during feasts of the Russian czars and rich merchants. At the time of Ivan the Terrible, there was a specially appointed person, called sturgeoner, who was obliged to deliver to the court up to 30 sturgeons per month.
Smoking is the best way to cook sturgeon because its meat contains about 15% fat that keeps the meat moist during the smoking process. Besides having a wonderful taste and high nutritional value, sturgeon is full of omega fatty acids which help to prevent heart diseases.
